As promised to the many people who have asked me for this recipe, here is the final recipe I am posting. Now, let’s teach you how to make my chocolate chip cookies, or crashout cookies as my friends like to call them
Ingredients:
- ½ cup of unsalted butter (one stick)
- ⅓ cup of granulated sugar
- ½ cup of light brown sugar
- vanilla extract (or paste—I prefer paste) – measure with your heart
- 1 large egg
- salt (I never measure, but about a teaspoon)
- 1 tsp Baking powder
- 1 and ½ cups of flour
- milk chocolate chips (I use Ghirardelli)
- Finally, the secret I hold off from sharing: MUSIC AND EMOTIONS! (Jay’s cookie playlist (Apple) and Jay’s cookie playlist (Spotify), this is the recommended music)
Personal recommendation: make these when you have heavy emotions about something. A situationship giving you mixed signals, needing to cry about anything, or an odd amount of joy that is out of the usual. From personal experience, it was almost always the first one for me, but who said that…
First, make sure your butter is softened, unless you want to brown it. If you are browning it, use a light-colored pan and place it on the stovetop over medium-low heat. Once it is heated, place your butter in and constantly move the butter so it doesn’t burn. As it heats, the lipids in the butter burn, causing it to brown. As it does, it will release a caramel, nutty scent. Once browned, allow to cool.
Combine the butter, granulated sugar, light brown sugar, and egg. This will cause you to have a more liquid batter. Once that is well incorporated, add in your vanilla, salt, and baking powder.
When this is added, it shouldn’t do much other than slightly lightening the color and adding a vanilla scent. If it does change drastically, you did something wrong.
Then next part is veryimportant!. When adding in your flour, add it in slowly; I personally do a half cup at a time. This allows for the cookies to be softer and airy, which is what makes my cookies so soft. Once most of the flour is added, minus half a cup, add in your chocolate chips. I say add with your heart. Once those are added, add the remaining half a cup of flour to the dough.
Let it chill for about 30 minutes to an hour, but you can skip this if you’re in a rush.. Once the dough it ready, let the oven preheat to 350 degrees Fahrenheit, so regardless if you decide to chill it you’ll have to let it sit. DO NOT PREHEAT BEFORE THE DOUGH IS READY. Allowing your dough to sit and incorporate fully allows for thicker, chewier, and softer cookies. While your oven is preheating, have a little boogie or cry session. once it is ready, bake your cookies for 11-15 minutes, stopping halfway through to rotate the pan for an even bake on all cookies. You can tell when they are done when the edges are golden brown and the cookies flattened a tad.
If done correctly your kitchen should smell like heaven. Personally, baking these cookies has helped me stay sane throughout many voicenotes to friends, tears over physics, or even just because for my techies, friends, and teachers. I have perfected this recipe throughout many long nights.
